Recession, crockpot chicken for a cold day

It is freaking cold, the ice on the way to take SR to school was nightmarish, another blog post in itself.

However, I still have a bit of scooping to do.

PN has already been out and played, reentered the house demanding hot cocoa with marshmallows, and oatmeal.

Anywho, I am not running to the store. Too cold, and do not want to.

So I found a bunch of dark chicken pieces I picked up from the store in the freezer, defrosted them, and threw them in the crockpot.

With DH gone, it is hard cooking for 3, I am never sure what or how much the kids will eat. you know kids, one day they will eat you out of house and home, and the next day they might not be very hungry.

However, this recipe always seems to do the trick, and they eat and eat...

Recession crockpot chicken for a cold day

1 onion, chopped
10 oz. Coke
1 sm. bottle ketchup
3 tbsp. brown sugar
1/2 tsp. salt
1/4 tsp. pepper

throw your chicken in, turn your cooker on and go.

I did the crockpot yesterday. It was supposed to be chili mac, and the photo looked great, but it was more like "noodles with some ground beef." Not spectacular. And now I have a whole lot of it. Cooking for one sucks bigtime.

What kind of chicken - thighs, boneless breasts, anything?

you can use whatever, but I am using cheap parts today...because hell it is recession chicken...

I threw 2 thighs, 4 drums, and 4 wings in...

cook until it is done...

If you want the sauce to thicken use a bit or cornstarch and mix it in as you would gravy...

I know when my husband's gone I rarely cook. We have more 'breakfast' things - scrambled eggs, pancakes and the like.
